In a large bowl, mix together rolled oats, peanut butter, honey, cocoa powder, and vanilla extract until well combined.

Place the mixture in the refrigerator for 30 minutes to allow it to firm up.

Once firm, shape the mixture into small balls and roll them in shredded coconut.

Press mini chocolate chips into each ball to resemble reindeer or snowman poop.

Place the balls on a baking sheet lined with parchment paper and refrigerate for another 30 minutes.
