  1. Rinse the red quinoa under cold water.
  2. In a saucepan, bring vegetable broth to a boil and add the rinsed quinoa. Cook for about 15 minutes or until the quinoa is tender.
  3. While the quinoa is cooking, heat olive oil in a large skillet over medium heat. Add chopped garlic and onion, and sauté until translucent.
  4. Add the sliced mushrooms to the skillet and cook until they release their moisture and become tender.
  5. Stir in the chopped kale and cook until wilted.
  6. Once the quinoa is cooked, fluff it with a fork and transfer it to the skillet with the sautéed vegetables.
  7. Drizzle lemon juice over the mixture and season with salt and black pepper.
  8. Stir everything together and let it cook for an additional 2-3 minutes.
  9. Remove from heat and let it rest for 5 minutes.
