  3. Pour in red wine and cook until reduced by half.
  4. Add vegetable broth, bay leaves, thyme sprigs, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. While the soup is simmering, preheat the broiler. Place baguette slices on a baking sheet and top with grated Gruyere cheese.
  6. Broil until the cheese is melted and bubbly.
