Heat olive oil in a large pot over medium heat. Add sliced red onions and cook until caramelized, about 20 minutes.

Add minced garlic cloves and cook for an additional 2 minutes.

Pour in red wine and cook until reduced by half.

Add vegetable broth, bay leaves, thyme sprigs, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.

While the soup is simmering, preheat the broiler. Place baguette slices on a baking sheet and top with grated Gruyere cheese.

Broil until the cheese is melted and bubbly.

Ladle the soup into bowls and top each bowl with a cheesy baguette slice.
