Peel and dice the butternut squash.

Heat cooking oil in a large pot over medium heat.

Add red curry paste and cook for 1-2 minutes.

Add diced butternut squash, red bell pepper, and green beans to the pot. Cook for 5 minutes.

Pour in coconut milk and vegetable broth. Stir well.

Bring the mixture to a boil, then reduce heat and simmer for 20-25 minutes, or until the squash is tender.
