In a blender, combine raspberries, peaches, coconut milk, maple syrup, and vanilla extract. Blend until smooth.

In a saucepan, sprinkle agar agar over 1/4 cup water and let it sit for 5 minutes.

Heat the saucepan over low heat, stirring constantly until the agar agar dissolves completely.

Remove from heat and let it cool for 5 minutes.

Gradually pour the fruit mixture into the saucepan with agar agar while stirring continuously.

Pour the mixture into dome-shaped silicone molds and refrigerate for at least 2 hours.

Once set, carefully remove the domes from the molds and garnish with fresh mint leaves.
