Rinse the quinoa under cold water.

In a saucepan, bring 2 cups of water to a boil. Add the rinsed quinoa and reduce heat to low. Cover and simmer for 15 minutes or until all the water is absorbed.

In the meantime, chop the cherry tomatoes, cucumber, red bell pepper, yellow bell pepper, orange bell pepper, red onion, and fresh parsley.

In a small bowl, whisk together fresh lemon juice, olive oil, salt, and black pepper to make the dressing.

Once the quinoa is cooked, fluff it with a fork and transfer it to a large salad bowl.

Add the chopped vegetables and dressing to the quinoa. Toss gently to combine.

Serve the rainbow quinoa energy salad immediately or refrigerate for later.
