Rinse the quinoa under cold water and cook according to package instructions.

Preheat the oven to 400°F (200°C).

Cut the cauliflower into small florets and place on a baking sheet. Drizzle with olive oil, salt, and black pepper. Roast in the oven for 15-20 minutes, or until golden brown.

In a large bowl, combine the cooked quinoa, roasted cauliflower, dried cranberries, and pine nuts.

In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper. Pour the dressing over the quinoa mixture and toss to combine.

Let the dish rest for 5 minutes to allow the flavors to meld together.
