This is vegan, gluten free and high protein recipe. Dish can be prepared in 40 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 10.

Rinse the quinoa under cold water.

In a saucepan, bring the vegetable broth to a boil. Add the quinoa and reduce the heat to low. Cover and simmer for 15 minutes.

In a separate pan, heat the olive oil over medium heat. Add the onion and garlic and sauté until softened.

Add the cooked quinoa to the pan with the onion and garlic. Stir in the dried cranberries, almonds, salt, and black pepper.

Cook for an additional 5 minutes, until heated through.

Remove from heat and let it rest for 5 minutes.

Garnish with fresh parsley before serving.
