Quinoa is actually a seed, not a grain, and it is considered a complete protein source.

Rinse quinoa under cold water.

In a saucepan, bring vegetable broth to a boil and add quinoa. Cook for 15 minutes or until quinoa is tender.

In a separate pan, heat olive oil and sauté onion, garlic, carrot, and bell pepper until softened.

Add frozen peas, dried herbs, salt, and black pepper to the pan. Cook for an additional 5 minutes.

Once quinoa is cooked, fluff it with a fork and add it to the pan with the vegetables. Mix well.

Remove from heat and stir in lemon juice and fresh parsley.

Let the pilaf rest for 5 minutes before serving.
