Cook quinoa according to package instructions.

In a large bowl, combine cooked quinoa, drained and rinsed black beans, diced red bell pepper, sliced cucumber, halved cherry tomatoes, finely chopped red onion, and chopped fresh cilantro.

In a small bowl, whisk together lime juice, olive oil, salt, and black pepper.

Pour the dressing over the quinoa mixture and toss to coat.
