Ingredients
  • 2 cup White beans
  • 1 medium Onion
  • 2 medium Carrot
  • 2 stalks Celery stalks
  • 3 clove Garlic cloves
  • 4 cup Vegetable broth
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoon Olive oil
  • 2 tablespoon Fresh parsley
Instructions
  1. Rinse the white beans and soak them in water overnight.
  2. In a large pot, heat olive oil over medium heat.
  3. Add chopped onion, carrot, celery, and minced garlic. Sauté for 5 minutes.
  4. Drain the soaked beans and add them to the pot.
  5. Pour in vegetable broth and add dried thyme, salt, and black pepper.
  6. Bring the soup to a boil, then reduce the heat and simmer for 25-30 minutes or until the beans are tender.
  7. Remove from heat and let it rest for 5 minutes.
  8. Serve hot, garnished with fresh parsley.
