  1. Trim the tough ends of the asparagus and cut them into 1-inch pieces.
  2. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic. Cook until onion is translucent.
  3. Add asparagus pieces to the pot and cook for 5 minutes.
  4. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes, or until asparagus is tender.
  5. Use an immersion blender or transfer the soup to a blender to puree until smooth.
  6. Season with salt, black pepper, lemon juice, and fresh parsley.
  7. Serve hot and garnish with additional parsley if desired.
