Pumpkin, sweet potato, and black beans are all excellent sources of dietary fiber.

  1. In a large pot, heat olive oil over medium heat. Add the onion, garlic, and bell pepper. Cook until softened, about 5 minutes.
  2. Add the pumpkin and sweet potato. Cook for another 5 minutes.
  3. Add the chili powder, cumin, paprika, cayenne pepper, salt, and pepper. Stir to coat the vegetables.
  4. Pour in the vegetable broth and canned tomatoes. Stir well.
  5. Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 20 minutes.
  6. Add the black beans and cook for an additional 5 minutes.
  7. Remove from heat and let the chili rest for 10 minutes.
  8. Serve the chili hot, garnished with cilantro and lime wedges.
