Add the diced pumpkin and cook for 5 minutes.

Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes, or until the pumpkin is tender.

Use an immersion blender or transfer the mixture to a blender and blend until smooth.

Return the blended soup to the pot and stir in coconut milk. Season with salt, black pepper, and nutmeg.
