  • 200 gram Tomatoes
  • 150 gram Cucumbers
  • 150 gram Bell peppers
  • 50 gram Red onions
  • 100 gram Olives
  • 100 gram Feta cheese
  • 20 gram Fresh basil leaves
  • 20 gram Fresh parsley leaves
  • 2 teaspoon Extra virgin olive oil
  • 1 teaspoon Red wine vinegar
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Chop the tomatoes, cucumbers, bell peppers, red onions, and olives into bite-sized pieces.
  2. In a large bowl, combine the chopped vegetables with crumbled feta cheese.
  3. Tear the fresh basil leaves and parsley leaves into small pieces and add them to the bowl.
  4. In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, salt, and black pepper to make the dressing.
  5. Pour the dressing over the salad and toss to combine.
  6. Let the salad rest for a few minutes to allow the flavors to meld together.
  7. Serve the Provencal salad chilled and enjoy!
