Peel and chop the potatoes into cubes.

Heat oil in a pan and add cumin seeds.

Once the cumin seeds crackle, add chopped onions and sauté until golden brown.

Add chopped garlic, ginger, and green chilies. Sauté for a minute.

Add chopped tomatoes and cook until they turn soft.

Add coriander powder, turmeric powder, red chili powder, and salt. Mix well.

Add the chopped potatoes and mix until they are coated with the spice mixture.

Add water, cover the pan, and cook for 15-20 minutes or until the potatoes are tender.

Sprinkle garam masala and cook for another 2 minutes.
