Ingredients
  • 2 cup Red beans
  • 1 medium Onion
  • 3 clove Garlic cloves
  • 1 medium Carrot
  • 1 medium Potato
  • 1 medium Tomato
  • 2 tablespoon Olive oil
  • 1 teaspoon Paprika
  • 1 leaf Bay leaf
  • 4 cup Vegetable broth
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Fresh parsley
Instructions
  1. Soak the red beans in water overnight.
  2. Drain the beans and rinse them.
  3. In a large pot, heat olive oil over medium heat.
  4. Add the chopped onion and minced garlic cloves. Cook until translucent.
  5. Add the chopped carrot, potato, and tomato. Stir well.
  6. Add the soaked red beans, paprika, bay leaf, vegetable broth, salt, and black pepper.
  7. Bring the soup to a boil, then reduce the heat and simmer for 40 minutes or until the beans are tender.
  8. Remove the bay leaf and adjust the seasoning if needed.
  9. Serve the soup hot, garnished with fresh parsley.
