Peperonata
Peperonata is a traditional Italian dish made with sweet bell peppers and often served as a side dish or topping for bruschetta.

Heat olive oil in a large pan over medium heat.

Add the sliced onion and garlic cloves. Sauté until translucent.

Add the sliced bell peppers and cook for 10 minutes until they start to soften.

Add the tomatoes, red wine vinegar, sugar, salt, and black pepper. Stir well.

Reduce the heat to low, cover the pan, and simmer for 30 minutes.

Remove from heat and let it rest for 10 minutes.
