In a mixing bowl, combine all-purpose flour, salt, and 2 tablespoons of oil. Gradually add water and knead to form a smooth dough. Cover and let it rest for 10 minutes.

In a separate bowl, soak the split yellow peas in water for 30 minutes. Drain the water.

In a blender, grind the soaked peas, ginger, green chili, cumin seeds, coriander powder, turmeric powder, red chili powder, garam masala, and salt into a coarse paste.

Divide the dough into small portions and roll them into small circles. Place a spoonful of the pea mixture in the center of each circle and seal the edges to form a ball.

Heat oil in a deep pan for frying. Fry the kachoris on medium heat until golden brown and crispy.
