  1. In a large bowl, mix together peanut butter, honey, oats, flaxseed meal, and vanilla extract until well combined.
  2. Roll the mixture into small balls, about 1 inch in diameter.
  3. Place the balls on a baking sheet lined with parchment paper.
  4. Place the baking sheet in the refrigerator and let the balls rest for 30 minutes.
  5. In the meantime, melt the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth.
  6. Take the peanut butter balls out of the refrigerator and dip each ball into the melted chocolate, coating it completely.
  7. Place the coated balls back on the baking sheet and refrigerate for another 30 minutes or until the chocolate is set.
  8. Serve and enjoy!
