Rice burgers originated in Japan and gained popularity for being a healthier alternative to traditional bread-based burgers. They are a great way to enjoy the flavors of rice in a convenient handheld form.

In a large bowl, combine cooked rice, soy sauce, sesame oil, garlic powder, and onion powder. Mix well.

Form rice mixture into patties of desired size and shape.

Heat vegetable oil in a pan over medium heat. Cook rice patties for 3-4 minutes on each side, or until golden brown and crispy.

In the meantime, julienne the carrot and cucumber.

Assemble the rice burgers by placing a lettuce leaf on the bottom bun, followed by a rice patty, carrot, cucumber, vegan mayonnaise, sesame seeds, salt, and black pepper.

Cover with the top bun and serve immediately.
