  1. Peel and pit the peaches, then chop them into small pieces.
  2. In a large pot, combine the chopped peaches, ginger, coconut milk, vegetable broth, lime juice, honey, and salt.
  3. Bring the mixture to a boil over medium heat, then reduce the heat and let it simmer for 15 minutes.
  4. Remove the pot from the heat and let the soup cool slightly.
  5. Using an immersion blender or a regular blender, puree the soup until smooth.
  6. Return the soup to the pot and reheat it over low heat if necessary.
  7. Serve the soup hot, garnished with fresh mint leaves.
