  1. In a mixing bowl, combine semolina, all-purpose flour, baking soda, and salt. Add water gradually to make a stiff dough. Cover and let it rest for 10 minutes.
  2. Divide the dough into small portions and roll them into small puris.
  3. Heat oil in a deep frying pan and fry the puris until they turn golden brown and crispy. Remove and set aside.
  4. Boil the potatoes, peel them, and mash them. Add chopped onions, coriander leaves, mint leaves, and spices. Mix well.
  5. Make a small hole in each puri and fill it with the potato mixture.
  6. Dip the filled puris in tamarind chutney and green chutney.
  7. Serve the pani puris with spiced water.
  8. To prepare the spiced water, mix tamarind chutney, green chutney, salt, red chili powder, cumin powder, and black salt with water.
  9. Enjoy the tangy and spicy pani puris!
