Rinse the lentils and rice separately.

In a large pot, heat 2 tablespoons of olive oil over medium heat.

Add the onions and cook until crispy and golden brown. Remove half of the onions and set aside for garnish.

To the pot, add the cumin, salt, black pepper, lentils, and water. Bring to a boil, then reduce heat and simmer for 20 minutes.

Add the rice to the pot and continue simmering for another 20 minutes, or until the lentils and rice are cooked and tender.

Remove from heat and let it rest for 10 minutes.

Serve the lentils and rice topped with the reserved crispy onions.
