Rinse the rice with cold water and drain.

In a large pot, add the vegetable broth and bring it to a boil.

Add the rice, mixed vegetables, tofu, soy sauce, sesame oil, garlic, ginger, green onions, salt, and pepper to the pot.

Stir well and bring to a simmer.

Cover the pot and let it cook for about 15-20 minutes, or until the rice is cooked and the vegetables are tender.

Remove from heat and let it rest for 5 minutes.

Fluff the rice with a fork and serve hot.
