  1. Heat olive oil in a large pot over medium heat. Add sliced onions and cook until caramelized, stirring occasionally.
  2. Add bay leaves, thyme, salt, and black pepper to the pot. Stir well.
  3. Pour vegetable broth into the pot and bring to a boil. Reduce heat and simmer for 30 minutes.
  4. While the soup is simmering, toast the bread slices until crispy.
  5. Remove the bay leaves from the soup and discard.
  6. Ladle the soup into bowls and place a slice of toasted bread on top of each bowl.
  7. Sprinkle vegan cheese on top of the bread slices.
  8. Place the bowls under the broiler for a few minutes until the cheese melts and turns golden.
  9. Remove from the broiler and let the soup rest for 5 minutes before serving.
