  1. Heat olive oil in a large pot over medium heat. Add sliced onions and cook until caramelized, stirring occasionally.
  2. Pour in white wine and cook for 2 minutes to deglaze the pot.
  3. Add vegetable broth, thyme, bay leaf, salt, and black pepper. Stir well and bring to a simmer.
  4. Reduce heat to low, cover the pot, and let the soup simmer for 30 minutes.
  5. Meanwhile, preheat the oven to 350°F (175°C). Place baguette slices on a baking sheet and toast until crispy.
  6. Remove the bay leaf from the soup and discard.
  7. Ladle the soup into bowls and top each with a slice of toasted baguette.
  8. Sprinkle vegan cheese on top of each slice.
  9. Place the bowls under the broiler until the cheese is melted and bubbly.
  10. Allow the soup to rest for 5 minutes before serving.
