Ingredients
  • 4 cup Vegetable Broth
  • 2 medium Potatoes
  • 2 medium Carrots
  • 1 medium Onion
  • 2 clove Garlic
  • 2 stalk Celery
  • 2 medium Tomatoes
  • 1 cup Green Beans
  • 1 cup Corn
  • 1 cup Peas
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 leaf Bay Leaf
  • 2 tablespoon Olive Oil
  • 2 cup Water
Instructions
  1. Heat olive oil in a large pot over medium heat. Add onions, garlic, celery, and carrots. Cook until vegetables are tender.
  2. Add potatoes, tomatoes, green beans, corn, peas, vegetable broth, water, salt, pepper, and bay leaf. Bring to a boil.
  3. Reduce heat and simmer for 30 minutes or until vegetables are cooked through.
  4. Remove bay leaf and serve hot.
