Ingredients
  • 2 cup Basmati rice
  • 1 cup Mixed nuts (e.g. almonds, pistachios, cashews)
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 2 tablespoon Olive oil
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 0.5 teaspoon Ground cinnamon
  • 0.5 teaspoon Salt
  • 4 cup Water
  • 2 tablespoon Fresh parsley
  • 4 serving Lemon wedges
Instructions
  1. Rinse the basmati rice under cold water until the water runs clear.
  2. In a large saucepan, heat olive oil over medium heat.
  3. Add chopped onion and minced garlic cloves. Sauté until golden brown.
  4. Add mixed nuts, ground cumin, ground coriander, ground cinnamon, and salt. Stir-fry for 2 minutes.
  5. Add the rinsed basmati rice and stir to combine with the nut mixture.
  6. Pour in water and bring to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  7. Remove from heat and let it rest for 5 minutes.
  8. Fluff the rice with a fork and garnish with fresh parsley.
  9. Serve hot with lemon wedges on the side.
