Ingredients
  • 8 ounce Kale
  • 2 tablespoon Olive oil
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 1 medium Carrot
  • 2 stalk Celery stalks
  • 4 cup Vegetable broth
  • 1 cup Canned diced tomatoes
  • 1 cup Cannellini beans
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until fragrant.
  2. Add carrot and celery, cook for a few minutes until they start to soften.
  3. Stir in kale and cook until wilted.
  4. Pour in vegetable broth and diced tomatoes. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Add cannellini beans, dried thyme, salt, and black pepper. Cook for an additional 10 minutes.
  6. Remove from heat and let the soup rest for 5 minutes.
  7. Serve hot and enjoy!
