Mushrooms are not vegetables but belong to the fungi kingdom. They are a great source of vitamins and minerals.
This is vegan and gluten free recipe. Dish can be prepared in 40 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 9.

Preheat the oven to 180°C (350°F).

Clean the mushrooms and remove the stems.

In a pan, heat olive oil over medium heat.

Add minced garlic and sauté for 1 minute.

Add mushroom caps, thyme, salt, and black pepper. Sauté for 5 minutes until mushrooms release their moisture.

Remove from heat and let it cool slightly.

In a bowl, mix breadcrumbs, Parmesan cheese, and chopped parsley.

Stuff each mushroom cap with the breadcrumb mixture.

Place the stuffed mushrooms on a baking sheet.

Bake in the preheated oven for 15 minutes until golden brown.

Remove from the oven and let it rest for 5 minutes.
