  1. Preheat grill or heat a large skillet over medium heat.
  2. Brush the mushrooms with olive oil and grill or pan-fry for 4-5 minutes on each side until tender. Remove from heat.
  3. In the same skillet, heat 1 tablespoon of olive oil and sauté the onion and garlic until softened.
  4. In a large bowl, combine the cooked quinoa, black beans, breadcrumbs, parsley, Worcestershire sauce, salt, and black pepper. Mix well.
  5. Add the sautéed onion and garlic to the bowl and mix until all ingredients are combined.
  6. Shape the mixture into 4 patties.
  7. Grill or pan-fry the patties for 3-4 minutes on each side until golden brown.
  8. Top each patty with a slice of Swiss cheese and let it melt.
  9. Toast the hamburger buns.
  10. Assemble the burgers by placing a patty on the bottom bun, followed by lettuce, tomato slices, mayonnaise, and mustard.
  11. Place the top bun and serve.
