  1. Cook the wild rice according to package instructions. Drain and set aside.
  2. Preheat the oven to 375°F (190°C).
  3. In a large pan, heat olive oil over medium heat. Add chopped onion and minced garlic. Cook until the onion is translucent.
  4. Add sliced mushrooms and cook until they release their moisture and start to brown.
  5. Stir in the cooked wild rice, spinach, thyme, salt, and black pepper. Cook for another 2-3 minutes until the spinach wilts.
  6. Roll out the puff pastry sheets into rectangles. Spoon the mushroom and wild rice mixture onto one half of each pastry sheet.
  7. Fold the other half of the pastry sheet over the filling and seal the edges by pressing with a fork.
  8. Transfer the strudels onto a baking sheet lined with parchment paper. Brush the tops with olive oil.
  9. Bake for 25-30 minutes until the pastry is golden brown.
  10. Remove from the oven and let it rest for 10 minutes before serving.
  11. Slice and serve the mushroom and wild rice strudel.
