Mu Shu is a traditional Chinese dish that originated in northern China and is commonly served with Mandarin pancakes.

  1. Press the tofu to remove excess moisture and cut into thin strips.
  2. Slice the shiitake mushrooms, cabbage, carrots, and scallions.
  3. In a small bowl, whisk together soy sauce, hoisin sauce, sesame oil, cornstarch, salt, and pepper.
  4. Heat vegetable oil in a large skillet or wok over medium-high heat.
  5. Add tofu and cook until lightly browned. Remove from the skillet.
  6. Add mushrooms, cabbage, carrots, and scallions to the skillet. Stir-fry until vegetables are tender.
  7. Push the vegetables to one side of the skillet and crack the eggs into the empty space. Scramble the eggs until cooked.
  8. Add the cooked tofu back to the skillet and pour the sauce mixture over the ingredients. Stir-fry for another minute.
  9. Warm the mu shu pancakes according to package instructions.
  10. Serve the mu shu filling in the warmed pancakes and roll them up.
