Rinse the lentils under cold water and set aside.

In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic, sauté until translucent.

Add the chopped carrots and tomatoes, cook for 5 minutes.

Add the lentils, vegetable broth, cumin, paprika, cinnamon, salt, and black pepper. Stir well.

Bring the mixture to a boil, then reduce heat to low and cover the pot. Simmer for 30-40 minutes or until the lentils are tender.

Remove from heat and let it rest for 10 minutes.

Stir in fresh cilantro and lemon juice.

Serve hot with rice or bread.
