  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic, sauté until translucent.
  3. Add the chopped carrots and tomatoes, cook for 5 minutes.
  4. Add the lentils, vegetable broth, cumin, paprika, cinnamon, salt, and black pepper. Stir well.
  5. Bring the mixture to a boil, then reduce heat to low and cover the pot. Simmer for 30-40 minutes or until the lentils are tender.
  6. Remove from heat and let it rest for 10 minutes.
  7. Stir in fresh cilantro and lemon juice.
  8. Serve hot with rice or bread.
