  • 500 gram Tomatoes
  • 200 gram Cucumber
  • 150 gram Red bell pepper
  • 100 gram Red onion
  • 2 gram Garlic cloves
  • 20 gram Fresh cilantro
  • 20 gram Fresh mint leaves
  • 2 teaspoon Lemon juice
  • 2 tablespoon Olive oil
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Paprika
  • 0.5 teaspoon Cayenne pepper
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
Instructions
  1. In a blender, combine tomatoes, cucumber, red bell pepper, red onion, garlic cloves, fresh cilantro, and fresh mint leaves.
  2. Blend until smooth.
  3. Add lemon juice, olive oil, ground cumin, ground coriander, paprika, cayenne pepper, salt, and black pepper.
  4. Blend again until well combined.
  5. Transfer the soup to a container and refrigerate for at least 2 hours.
  6. Serve chilled and garnish with fresh herbs if desired.
