  1. Rinse the rice under cold water until the water runs clear.
  2. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté until translucent.
  3. Add the spices (cumin, coriander, turmeric, cinnamon, salt, and black pepper) to the pot and cook for 1 minute, stirring constantly.
  4. Add the chopped carrot and bell pepper to the pot and cook for another 2 minutes.
  5. Add the rinsed rice, vegetable broth, raisins, and almonds to the pot. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  6. Remove from heat and let it rest for 5 minutes. Fluff the rice with a fork.
  7. Serve the Moroccan Pilaf garnished with fresh cilantro. Enjoy!
