  2. Heat olive oil in a large pot over medium heat. Add onions and garlic, and sauté until onions are translucent.
  3. Add carrots, potatoes, tomatoes, ground cumin, ground coriander, ground turmeric, cayenne pepper, salt, and black pepper. Stir well to combine.
  4. Add lentils and vegetable stock to the pot. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until lentils and veggies are tender.
  5. Remove the pot from heat and let it rest for 5 minutes.
  6. Use an immersion blender to blend the soup until smooth, or blend in batches using a regular blender.
  7. Return the blended soup to the pot and reheat if necessary.
  8. Stir in lemon juice and adjust salt and pepper to taste.
  9. Serve hot, garnished with fresh cilantro.
