Moroccan Chickpea Stew, also known as ‘Harira’, is a traditional Moroccan dish often served during Ramadan.

  1. Heat oil in a large pot over medium heat. Add onion and garlic, and cook until onion is translucent.
  2. Add carrots and potatoes, and cook for another 5 minutes.
  3. Stir in the ground cumin, coriander, turmeric, cinnamon, and paprika. Cook for 1 minute.
  4. Add chickpeas, tomatoes, vegetable broth, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 30 minutes.
  5. Stir in fresh cilantro and lemon juice.
  6. Let the stew rest for 10 minutes before serving.
  7. Serve hot with bread or rice.
