  1. Press the tofu to remove excess water and cut it into cubes.
  2. In a small bowl, mix together soy sauce, sesame oil, and cornstarch to make the sauce.
  3. Heat vegetable oil in a wok or large skillet over medium-high heat.
  4. Add garlic and ginger, and stir-fry for about 1 minute until fragrant.
  5. Add tofu cubes and stir-fry for 5-6 minutes until golden brown.
  6. Add broccoli, carrots, red bell pepper, snow peas, and mushrooms. Stir-fry for another 3-4 minutes until the vegetables are crisp-tender.
  7. Pour the sauce over the stir-fry and toss to coat.
  8. Cook for an additional 1-2 minutes until the sauce thickens.
  9. Remove from heat and let it rest for 5 minutes before serving.
  10. Serve hot and enjoy!
