Miso is a traditional Japanese seasoning made from fermented soybeans and grains. It adds a unique umami flavor to dishes.

  1. Press the tofu to remove excess water and cut into cubes.
  2. In a small bowl, whisk together miso paste, soy sauce, rice vinegar, honey, cornstarch, and water to make the sauce.
  3. Heat sesame oil in a large skillet or wok over medium-high heat. Add tofu cubes and stir-fry until golden brown. Remove tofu from the skillet and set aside.
  4. In the same skillet, add garlic and ginger and stir-fry for 1 minute. Add broccoli, carrot, bell pepper, snow peas, and mushrooms. Stir-fry for 3-4 minutes until vegetables are tender-crisp.
  5. Add the tofu back to the skillet and pour the sauce over the stir-fry. Stir well to coat everything in the sauce.
  6. Cook for another 2-3 minutes until the sauce thickens.
  7. Serve the miso stir-fry over cooked rice.
  8. Enjoy!
