MINUTE RICE Vegetarian Chili
Chili con carne, a popular Tex-Mex dish, traditionally includes meat, but this vegetarian version with Minute Rice is just as flavorful and satisfying.
This is vegan, gluten free and high protein recipe. Dish can be prepared in 45 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 14.

Cook Minute Rice according to package instructions.

In a large pot, heat vegetable oil over medium heat. Add onion, garlic, and bell pepper. Cook until vegetables are tender.

Add kidney beans, diced tomatoes, chili powder, ground cumin, salt, and black pepper to the pot. Stir well.

Bring the mixture to a boil, then reduce heat and simmer for 20 minutes.

Add corn kernels and cooked Minute Rice to the pot. Stir well and cook for an additional 5 minutes.

Remove from heat and let rest for 5 minutes.

Serve hot, garnished with fresh cilantro and lime wedges.
