Chili con carne, a popular Tex-Mex dish, traditionally includes meat, but this vegetarian version with Minute Rice is just as flavorful and satisfying.

  2. In a large pot, heat vegetable oil over medium heat. Add onion, garlic, and bell pepper. Cook until vegetables are tender.
  3. Add kidney beans, diced tomatoes, chili powder, ground cumin, salt, and black pepper to the pot. Stir well.
  4. Bring the mixture to a boil, then reduce heat and simmer for 20 minutes.
  5. Add corn kernels and cooked Minute Rice to the pot. Stir well and cook for an additional 5 minutes.
  6. Remove from heat and let rest for 5 minutes.
  7. Serve hot, garnished with fresh cilantro and lime wedges.
