Ingredients
  • 1 cup Couscous
  • 1/2 cup Dried Apricots
  • 1/4 cup Fresh Mint Leaves
  • 2 tablespoon Lemon Juice
  • 1 tablespoon Olive Oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 2 tablespoon Almonds (optional)
Instructions
  1. In a medium saucepan, bring 1 cup of water to a boil. Add the couscous, cover, and remove from heat. Let it sit for 5 minutes.
  2. Meanwhile, chop the dried apricots and mint leaves.
  3. Fluff the couscous with a fork and transfer it to a large bowl.
  4. Add the chopped apricots, mint leaves, lemon juice, olive oil, salt, and black pepper to the couscous. Mix well.
  5. Let the couscous salad rest for 5 minutes to allow the flavors to combine.
  6. Serve the minted apricot couscous salad as a main course or side dish. Optionally, garnish with almonds.
