Ingredients
  • 500 gram Potatoes
  • 1 cup Fresh Mint Leaves
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
Instructions
  1. Boil the potatoes until tender. Drain and let them cool.
  2. Preheat the oven to 200°C (400°F).
  3. Cut the boiled potatoes into cubes.
  4. In a bowl, combine the potatoes, fresh mint leaves, olive oil, salt, and black pepper. Toss well to coat.
  5. Spread the potato mixture on a baking sheet.
  6. Bake for 20 minutes or until the potatoes are crispy and golden brown.
  7. Remove from the oven and let them rest for 5 minutes.
