Add chopped tomatoes and vegetable stock. Bring to a boil, then reduce heat and simmer for 20 minutes.

Use an immersion blender or transfer the soup to a blender to puree until smooth.

Stir in lemon juice, salt, and black pepper. Simmer for an additional 5 minutes.

Serve hot, garnished with fresh parsley.
