Peel and slice the carrots into thin rounds.

In a large pot, bring water to a boil and add the carrots. Cook for about 10-12 minutes or until tender.

Drain the carrots and return them to the pot.

Add butter, honey, salt, and black pepper to the pot. Stir well until the butter is melted and the carrots are coated.

Cook the carrots over low heat for another 5 minutes, stirring occasionally.

Remove from heat and garnish with fresh parsley.
