Rinse the lentils under cold water and set aside.

In a large pot, heat olive oil over medium heat.

Add the onion and garlic, and sauté until softened.

Stir in the tomatoes, red bell pepper, lentils, vegetable broth, cumin, paprika, salt, and black pepper.

Bring to a boil, then reduce heat and simmer for about 25 minutes or until the lentils are tender.

Remove from heat and let it rest for 5 minutes.

Stir in fresh parsley and lemon juice.

Serve hot and enjoy!
