Matbucha
Matbucha is a popular Moroccan dish that is also commonly eaten in Israel, especially among the Jewish community.

Roast the bell peppers over an open flame until charred. Peel off the skin and remove the seeds.

In a food processor, blend the tomatoes, roasted bell peppers, and garlic cloves until smooth.

Heat olive oil in a pan and add the tomato-pepper mixture.

Stir in paprika, cumin, salt, sugar, and cayenne pepper.

Simmer over low heat for 30-40 minutes, stirring occasionally.

Remove from heat and let it rest for 30 minutes.

Stir in lemon juice and garnish with fresh parsley.
