Preheat the oven to 325°F (165°C).

In a large mixing bowl, combine the rolled oats, almonds, walnuts, pumpkin seeds, sunflower seeds, and coconut flakes.

In a small saucepan, heat the maple syrup, coconut oil, vanilla extract, and cinnamon over low heat until the coconut oil has melted.

Pour the liquid mixture over the dry ingredients and mix well until everything is evenly coated.

Spread the mixture onto a baking sheet lined with parchment paper.

Bake for 20-25 minutes, stirring halfway through, until the granola is golden brown.

Once cooled, stir in the dried cranberries and dried apricots.
