Ingredients
  • 1 head Romanesco
  • 1 head Cauliflower
  • 1 small Red onion
  • 1 cup Cherry tomatoes
  • 1 cup Kalamata olives
  • 1 cup Fresh parsley
  • 1 cup Fresh mint
  • 2 tablespoon Extra virgin olive oil
  • 2 tablespoon Lemon juice
  • 1 clove Garlic
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Cut the romanesco and cauliflower into bite-sized florets.
  2. Thinly slice the red onion.
  3. In a large bowl, combine the romanesco, cauliflower, red onion, cherry tomatoes, kalamata olives, fresh parsley, and fresh mint.
  4. In a small bowl, whisk together the olive oil, lemon juice, garlic, salt, and black pepper.
  5. Pour the dressing over the salad and toss to combine.
  6. Cover the bowl and let the salad marinate in the refrigerator for at least 30 minutes.
  7. Serve chilled and enjoy!
